Lamb Recipes

Casseroled Lamb

1 carrot
1 onion
1 stalk of celery
4 spring onions
3 oz. bacon
1 garlic clove
2 tbsp. oil
3 tbsp. chopped parsley
2½ lb. boned shoulder of lamb
2 oz. mushrooms
½ pint dry cider
¼ pint of stock
Salt and pepper
1 lb. potatoes
Chop carrot, onions and bacon. Crush garlic. Heat oil in a casserole. Add bacon, onions, celery, garlic and parsley. Fry till lightly browned.

Add meat to casserole and brown on all sides. Chop mushrooms and add to casserole with cider, stock and seasoning. Cover and cook 1 hour over low heat.

Peel and quarter potatoes. Add to casserole. Cook covered 30 minutes.

Serves 6.



Dijon Lamb Chops

8 loin or rib chops, 2 cm. thick
1 tbsp. butter
½ cup chicken stock
1 tbsp. dry mustard
½ tsp. rosemary
1 tbsp. lemon juice
Dash pepper

Trim fat from lamb chops.

Melt butter over medium-high heat. Add chops and cook 3 to 5 minutes each side. Mix stock, mustard, rosemary, lemon juice and pepper and blend well. Remove chops and keep warm.

Add sauce to pan. Scrape drippings into sauce. Bring to boil for 2 minutes or until sauce is reduced to half. Add chops and simmer.


Maple Baked Lamb

6 lamb chops
¼ cup french dressing
1 tsp. dry mustard
½ tsp. rosemary
½ tsp. sage
2 tsp. Worcestershire sauce
½ tsp. mint flakes
½ tsp. salt
Juice of half a lemon
½ cup maple syrup mixed with
2 - 3 tbsp. water
Mix together french dressing, dry mustard, spices, Worcestershire sauce, mint, salt and lemon. Brush on meat

Bake at 350 ºF 1 hour.

Drizzle with syrup mixture, cover tightly and cook at 325 ºF for 30 to 40 minutes, basting occasionally.


Russian Lamb Burgers

1 oz. fresh bread crumbs
2 tbsp. milk
8 oz. minced lamb
1 oz. gruyere cheese
1 small egg
Salt and pepper
1 tbsp. flour
1 oz. butter
8 oz. can tomatoes

Put bread crumbs in bowl with milk and soak for a few minutes. Add lamb, grated cheese, egg and seasoning. Mix well.

Divide mixture into 4, shape into patties and coat lightly with flour.

Melt butter in frying pan and fry for 5 minutes. Remove from pan. Keep warm.

Heat tomatoes. Drain and serve with burgers.

Serve with mashed potatoes topped with crisp, fries bread crumbs and bacon bits.
